Risotto bil-Mazzit

Servings: 4 portions

 

Ingredients:

      • 1 Onion
      • 2 tbsp Pork lard
      • 300g Risotto rice
      • 1L Hot vegetable stock
      • ½ Mazzit (Skin removed)
      • Salt and pepper
      • Fresh parsley (to serve)

Method/Preparation:

      1. Finely chop the onion. Heat the lard in a pan and fry the onion until lightly golden.
      2. Then, add the rice and hot stock. Bring to a boil and leave to simmer for 15-20 minutes (until the rice is almost tender).
      3. Chop the mazzit and stir it in the risotto, then season with salt and pepper. Cook for 3 more minutes.
      4. Garnish with fresh parsley and serve.
