Blood – Fresh blood, non-chemically treated but having fibrin removed through stirring, kept at room temperature. The blood is harvested from eithaer fattenaer swine (irrespective of gender) or of male bovines, and is sourced from approved slaughterhouses within the geographical area and extracted from livestock reared within the same territory. Traceability shall be ensured in line with Regulation (EC) No 178/2002.
Casings – the intestines of either swine or bovines are sourced from approved slaughterhouses within the geographical area and extracted from locally reared livestock. Traceability shall be ensured in line with Regulations (EC) No 178/2002.
Onions – white onions, known locally as basal ta’ Malta, and traced from farmer to the mazzit producer.
Salty water – Potable water mixed at production stage with salt harvested from salt-pans dug out of limestone by natural evaporation over the warmer months in Malta and traced from salt-producer to mazzit producer. The saltpans are practically all situated along the north-eastern coast and filled in manually/mechanically from the local sea water.
