Tripe Soup

(Traditional Recipe)

Servings: 4 portions

 

Ingredients:

    • 2 Kg Tripe
    • A handful of coarse sea salt
    • 1 Lemon
    • 4 Onions
    • 1 Pumpkin

 

Method/Preparation:

    1. Make sure that the tripe is clean. Open it up with a pair of scissors or a knife, rub it with the salt and lemon twice over and finally, rinse it well under running water.
    2. Cut the tripe, onions and pumpkin into small pieces.
    3. Place the tripe, pumpkin and onions into a pot together with some salt.
    4. Fill the pot with water, until everything is submerged.
    5. Boil for two hours.
