Mazzit is a traditional Maltese delicacy, blending sweet and savoury flavours, primarily made with the blood of young swine (fattener pigs) or young male bovines.
The blood is combined with a pre-prepared mix of local onions, raisins, cocoa powder or liquid chocolate, and sugar, then encased in either swine or bovine intestines. Producers also incorporate a small amount of natural sweet spices or flavourings.
The final product is sausage-shaped, weighing around 0.8 Kg (traditional Maltese ratal) with a tolerance of about 0.2 Kg (kwart ta’ ratal). Its brown colour comes from the semi-transparent intestine casing, revealing the visible onions, raisins, and zest. When sliced, it showcases a unique moist and crumbly texture.
Traditionally, it’s cut into slices about 2.5 cm thick, dusted with flour, and pan-fried on both sides.
