Mazzit Production Plant

In March 2024, the Public Abattoir inaugurated a Mazzit production plant within its Marsa complex which is approved under Regulation (EC) No 178/2002.

The plant allows mazzitto be produced on a small industrial scale, as part of a project co-financed by the European Union. Farmers or butchers’ shops or processors are being given access (against payment) to utilise this investment always under the control and supervision of the Public Abattoir. This mechanism ensures that the product is manufactured under supervision and in accordance with the hygiene and traceability norms necessary for a foodstuff to be fit for human consumption, also in view of the fact that mazzit uses blood as a main ingredient, and if it is not well maintained it easily turns bad. The Public Abattoir will also be ensuring that mazzit follows the traditional recipe and thus that traditional product is safeguarded from the risk of abuse. At the same time, it will allow the various producers to follow their particular recipe where the percentages of certain ingredients change between producers as well as with certain spices. Thus, the Abattoir is helping and complementing the private sector and not competing with it or facilitating unfair competition.

According to law, butcher shops producing mazzit cannot sell to other businesses unless they are registered under Regulation (EC) No 178/2002. Those who produce mazzit at this plant, however, will be able to sell it to restaurants and catering establishments as well as supermarkets, grocery stores and similar establishments.
